Soba noodle salad

This is a great meal for the summer and can be enjoyed as a side or main meal. You can add or remove whatever you like or don't like and make it your own. 

 

Soba noodle salad 

Serves 2

Ingredients 

For salad 

1/2 Cucumber thinly sliced in rounds 

1 avocado 

2 bundles soba noodles 

1/2 cup edamame beans 

4 pieces of firm tofu 

1/2 red chilli finely sliced 

1 handful of baby spinach 

2 soy eggs ( recipe here)

 

For dressing 

5 tbsp Soba salad dressing 

1 tsp toasted sesame oil

1 tbsp yuzu syrup 

 1 spring onion finely sliced 

toasted sesame seeds 

 

Garnish 

fresh torn coriander 

 

 

Method 

Step 1- Begin by making the soy eggs or 6 minute boiled eggs. 

Step 2- bring a pot of water to the boil and cook the soba noodles according to package instructions. Once cooked allow to cool down to at least room temperature.

Step 3- prepare all the salad ingredients

step 4- Mix the yuzu, soba dressing, sesame oil, spring onion and sesame seeds to make the dressing.

step 5- optionally pan fry the tofu to give it some colour.

Step 6- assemble the salad by mixing all the ingredients together except for the avocado and tofu. Dress it with all the dressing made earlier.

Step 7- Place the avocado and tofu on top of the salad and enjoy.
