Mock meat veggie stir fry
This quick meal can be ready in under 20 minutes and is a great weekday option. The best part of stir frys is the opportunity to make it your own. Feel free to substitute any vegetables for ones that you like or have.
Mock meat chicken & vegetable stir fry
Serves: 2-3
Ingredients:
1/4 cup of high smoke point oil such as canola or vegetable
aromatics( foundation of flavour)
1 inch piece ginger cut into small buttons
2 cloves garlic sliced
1 spring onion greens sliced thinly for garnish and whites roughly chopped
1 mild red chilli thinly sliced (seeds are optional)
2 squash roughly sliced
1 brown onion sliced thick
1 bunch boy chow or any leafy green vegetables
1 bunch spinach roughly chopped
1 yellow capsicum roughly chopped
1 red capsicum roughly chopped
1 carrot sliced in half lengthways and sliced again
1 can chicken mock meat drained
sauce ingredients
1 teaspoon daisho aji shio kosho
3 tablespoons sake
3 tablespoons rice wine vinegar
1/2cup oyster sauce (to make vegan substitute for sweet soy sauce)
Garnishes (optional)
handful of coriander as an optional garnish
sprinkle roasted sesame seeds for garnish
Drizzle toasted sesame oil
Drizzle Chilli oil
Method
Step 1 - Begin by preparing all the ingredients and weighing everything that you will need out. This is a quick recipe once you start cooking but only if you have everything ready to go.
Step 2 - Preheat a pan or wok over high heat until very hot (approximately 2 minutes).
Step 3 - Add the oil to to pan or wok and immediately add the ginger, garlic, spring onion whites and chilli stir for approximately 1 minute.
Step 4 - Add the onion, mock meat and capsicum and stir for a further minute
Step 5 - Add the seasoning mix, sake, rice vinegar and oyster sauce and mix well
Step 6 - Finally Add the bok choy and spinach and give it a final mix and stir for approximately 30 seconds
Step 7 - Remove from the heat and transfer the stir fry to a serving bowl
Step 8 - Garnish with any or all of coriander, spring onion greens, toasted sesame oil, toasted sesame seeds and chilli oil.
This stir fry can be served with rice or your favourite noodles and goes great with ocean bomb sparkling peach cider.
